Buffalo Chicken Quesadillas
Have your buffalo wings and quesadillas too with 47G protein!
It’s a bummer that the Superbowl only happens once a year. It’s the only time I get to eat one of my favorite snack foods, deep-fried and crispy buffalo wings. I’m 100% confident I could devour three pounds of them guilt-free, which might simultaneously qualify me for a wing-eating competition and up my cholesterol. That’s why I must keep the wing demon within me at bay until Super Bowl LVIII.
A temporary relief from this curse comes in the form of this quesadilla recipe. It’s just as tangy and spicy as regular buffalo wings, with a nice crunch from the golden brown tortilla. Stuffed with juicy shredded chicken, light cheese, creamy greek yogurt, and freshly chopped green onions, it doesn’t get any better than this besides real buffalo wings.
Here are my notes on making this:
Time-saving hack: Use rotisserie chicken or any cooked chicken to make this a 15-minute meal.
Fresh is best: If you have a little extra time, cooking the chicken from scratch will make the quesadilla even better.
Sauce selection matters: Make sure to get an excellent low-calorie buffalo sauce. I used Noble Made.
Trim the calories: Lower the calories more by using a high-fiber wrap like Ole Extreme.

Ingredient List
4 bone-in split chicken breasts
Avocado oil spray
4-5 tbsp buffalo sauce
4 tbsp plain non-fat greek yogurt
1 1/2 cups of light shredded mexican cheese
3 tbsp buffalo seasoning
Chopped green onions
Cooking Instructions
Bake The Chicken 🍗
Preheat the oven to 350 degrees. Pat chicken breasts dry with a paper towel.
Coat lightly with avocado oil. Season with buffalo seasoning.
Place chicken on a baking sheet and add it to the oven. Cook for 30 minutes.
After 30 minutes, turn on the broiler and brown the chicken for 5 minutes.
Take the chicken out of the oven and let it rest for 5 minutes. Shred chicken.
Make Quesadillas 🌮
Add the shredded chicken, greek yogurt, shredded cheese, buffalo sauce, and chopped green onions to a bowl. Mix until well combined.
Lay out one tortilla and place 6 oz of the buffalo chicken mixture on half of it.
Fold over the other half and press down on the quesadilla to flatten it.
Add the quesadilla to a pan over medium-low heat and toast both sides until golden brown. Cut in half and enjoy!
