Spicy Protein Nachos
Easy protein-packed lunch with 55G protein that will make you sweat!
Nachos used to be one of my favorite things to eat besides hamburgers. In college, my staple Taco Bell order was the Nacho Bell Grande which I’d normally consume at 2 am while hanging out with friends. I miss the days when I could eat 3000 calories in one sitting at the worst time of the day without physical consequences. Sadly those days are over, but that doesn’t mean the nacho-eating days are over!
I discovered this while eating some protein chips made by Quest Nutrition. They recently came out with these hot & spicy chips that remind me so much of Spicy Doritos. I was enjoying it more as a snack but wanted to turn it into a meal.
After digging through our labyrinth of a fridge for about 10 minutes, I gathered a few ingredients to upgrade this snack into something that would keep me satiated until dinner. It only took me about 5-7 minutes in total to put it all together, allowing me time to enjoy my food without choking before my next work meeting.

The spicy protein chips aren’t a must. There are other flavors to choose from!
You can get these chips from Target, Vitamin Shoppe, or on Amazon.
Save time by using cooked chicken like rotisserie or frozen chicken.
Add wet ingredients like salsa or sour cream right before you eat.

Ingredient List
1 1/2 bags of Quest Spicy Chips
1/2 cup light Mexican cheese
2 tbsp light sour cream
Salsa
Additional toppings of choice
Cooking Instructions
Build Nachos 🌶️
Lay out the protein chips on a plate.
Top with Mexican cheese and melt in the microwave for 30 - 40 seconds.
Warm up the chicken in the microwave for about 30 seconds as well.
Spread the chicken evenly across the chips.
Add light sour cream, salsa, and any additional toppings you like. Enjoy!
