Poblano Turkey Tacos
Plus a bonus Starbucks-style egg white bites recipe with bacon & gruyère
Hey everyone! Greetings yet again from Colorado Springs, where I’m still enjoying vacation until tomorrow. Besides the breathtaking views, I‘ve been greatly distracted by every food temptation known to man. The biggest one of all being In-N-Out, which I haven’t been to since 2021. To make up for lost time, I’ve visited there twice in the seven days I’ve been here, just for pictures though. Here’s what I found just lying around on one of the tables outside:
As I continue to fight stuffing my face like a squirrel, I’m reminded why I started Protein Cuizine in the first place. Vacation or not, we all continuously face food temptations that can derail any good diet plan. Cheat meals, in particular, can be the trojan horse that makes us fall off the bandwagon because they seem much more exciting and flavorful than what we crave.

Both are not only delicious but packed with protein to help curb cravings without compromising flavor. So let's dive right into the recipes!

POBLANO TURKEY TACO RECIPE
Ingredient List
2 lbs 99% ground turkey
Corn tortillas
4 poblano peppers, chopped
7 pepper jack cheese slices, chopped
Chopped red onion
Salsa of choice
2 tsp goya adobo all-purpose seasoning
Garlic powder
Avocado oil spray
Cooking Instructions
Make Tacos 🌮
Preheat a pan over medium-high heat with avocado oil and add the poblano peppers.
Saute the peppers until soft and season lightly with salt, pepper, and garlic powder.
Remove the peppers, spray additional oil, and add the ground turkey.
Season the ground turkey with goya seasoning and break up the meat with a spatula or spoon.
Cook the ground turkey until brown and remove from the pan.
Add the turkey, peppers, cheese, and chopped onion to warm corn tortillas. Enjoy!

STARBUCKS EGG WHITE BITES RECIPE
Ingredient List
16 oz egg whites
3/4 cup cottage cheese
3/4 cup shredded gruyère or swiss cheese
4 tbsp bacon bits
2 dashes of Frank’s hot sauce
1 tbsp cornstarch
2 tsp garlic powder
1 tsp black pepper
3/4 tsp salt
Cooking Instructions
Mix Ingredients 🥄
Preheat an oven to 300 degrees and bring a quart of water to a boil in a pot.
Add everything in the list except for the bacon bits to a blender. Blend for 30 seconds.
Bake Egg Bites 🐣
Spray a muffin tin with non-stick spray. Pour egg mixture into each muffin tin hole, filling each up halfway.
Sprinkle the bacon bits evenly into each mixture and give it a quick stir.
Pour the hot water on a baking sheet and place in the oven on the bottom rack.
Add the muffin tin to the oven on the middle rack. Cook for 23 - 25 minutes.
Remove the muffin tin from the oven and carefully flip it over on a cutting board to release the egg bites. Alternatively, you can use a silicone spatula to remove each egg bite from the tin.
Let cool for 5 minutes and enjoy!
